OLIVE AND TOMATO SALAD

2 plum or Roma tomatoes, chopped

1/4 cup diced mixed olives

1/4 cup minced red onion

1 tablespoon olive oil

1/2 tablespoon balsamic vinegar

5 fresh basil leaves, cut in chiffonade

Sea salt

Black pepper

In a salad bowl, combine the tomatoes, olives, and onion. Toss with the

oil and vinegar. Top with the fresh basil, and season to taste with salt and

pepper.
